“Sometimes I just grow stuff to see what it looks like or because I read a story about it,” said Erika Brady. Brady holds the fuchsia Callaloo amaranth, which is known for its grain. Dr. Brady remembers that her grandfather used to talk about a fish stew from his home of St. Croix that used the plant’s leaves.
