Ryan Arensdorf, executive chef at the Cottonwood, with his version of the Reuben. A friend in the food industry, Jay Kulakofsky, is the great-great-great nephew of Reuben Kulakofsky, who is said to have come up with the idea for the sandwich at the Blackstone Hotel, now the Cottonwood, in the 1920s or ’30s.
